Perfect Potato Salad

There are few things in life that I love more than a good potato salad in the summer. And when I say good potato salad, I mean homemade. A store-bought potato salad has just never done it for me like homemade and this is the recipe that I keep coming back to!

Ingredients:

  • 6-8 large white potatoes, diced

  • 5 hard-boiled egg, chopped

  • 1 fresh jalapeno, finely chopped

  • 3 green onions, finely chopped

  • 3-4 pickled pepperoncinis, finely chopped

  • A good handful of fresh herbs, chopped (anything really will do, I used oregano, sage and parsley)

  • Smoked paprika, if desired

For the dressing:

  • 1 - 1 1/2 cups mayo (I prefer Miracle Whip in salads)

  • 1/4 cup pickle juice

  • 1 tbsp Worcestershire sauce

  • 1 tbsp hot sauce of choice

  • 2 tbsp mustard (I used Trader Joe’s Pickle Mustard)

  • 1 tsp dried dill

  • 1 tsp chilli flakes

  • Salt & pepper to taste


Steps:

  1. Bring a large pot of salted water to a rolling boil and boil potatoes for approximately 5 minutes or until fork tender (this will depend on how large you cut them)

  2. Drain potatoes and rinse with cold water until cool to the touch

  3. In a small bowl, combine all dressing ingredients and mix well

  4. In a large bowl, combine all salad ingredients and mix well

  5. Add dressing to the salad and combine all ingredients thoroughly

  6. Top with smoked paprika if desired

  7. Cover and refrigerate for at least 4 hours, overnight for best results
