You Do NOT Need to Discard Sourdough Starter!*

Once your starter is established, you do NOT need to discard your starter or maintain a crazy large amount of it! You can keep a very small amount of starter in a small jar and just feed it what you need to for the upcoming baking you’re looking to do.
For example, if you have 25g unfed starter, you can feed it 50g water + 50g flour to get 125g of active starter: 100g for your recipe and a bit leftover to maintain.
Used up all your starter baking? Worry not! Scrape down the sides of your jar and feed any little bits you have remaining, you really don’t need much! (You can even add a bit of water to the jar, put the lid on and shake it up really good)
Going on vacation and can’t feed your starter? Throw it in the fridge! Your sourdough starter is NOT a full-time commitment and you absolutely can seal it up well and throw it in the fridge to take a break.
